One of our favorites is in the form of Mexican Food. Taco Salads are by far our most often eaten dish. We love soups this time of year and Taco soup is also a great way to use black beans. We have also decided that we think sweet potatoes go really good with black beans so I have been working on some dishes that included both. Then at the end of the week I will use the rest of the black beans and turn into chili that goes great on baked potatoes (I will probably just put the potatoes in the crock pot with a little water and let them "bake" that way.)
With Christmas baking and prep for that I'm keeping meals even more simple the next few weeks. But really it's always pretty simple. Most people don't believe me when I tell them dinner most every night only takes about 20-40 minutes of my time. Of course there are exceptions but they are rare....I promise most nights I pay attention to the time I start cooking until dinner is ready. Not very often is it much more than half an hour to cook a healthy homemade meal!
