Pumpkin Pie Ice Cream

This recipe has been around before you could buy coconut milk ice cream at the store. When we first made this we knew that our Simple Healthy Lifestyle could be sustained and that we wouldn't EVER feel deprived! It's been a lot of years since then and we have made this recipe plenty of times.

Pumpkin Pie "Ice Cream"
2 Cans coconut milk (not light)
2 cups canned pumpkin
1 teaspoon nutmeg or to taste
1/2 Tablespoon Cinnamon or to taste
1/4 teaspoon cloves
1/4 teaspoon ginger
1 quart of Rice milk
1 Tablespoon Vanilla
1 teaspoon guar gum (optional)
2 cups raw sugar or sucanat
ice cream machine
ice cream salt
1 bag of ice

Mix first 9 ingredients all together till smooth if the coconut milk is very think you may want to blend ingredients in blender first so it is well blended. Put into your ice cream maker container. Follow the instructions on your ice cream machine. Mighty Tasty!
