Seven Layer Dip


Who doesn't love 7 layer dip! Now you can love it healthfully! Be sure to make your own Taco Seasoning it's what really makes it good.  You can make the "sour cream" totally dairy free or with super assimilable omega 3's with cottage cheese and flax. We all could use more Omega 3's especially the highly assimilable kind! *see note below





Seven Layer Dip
3-4 cups of Refried Beans or Bean Dip
1 heaping cup freshly made kind of runny Cheezy Sauce
1 cup sour cream* see note at end of post
1 can corn, drained
1 can olives, drained and sliced
1 heaping cup Guacamole
1 recipe Simple Pico* Recipe below

In casserole dis spread beans and cheezy sauce.  Broil in oven for just a few minutes, remove just as cheezy sauce almost starts to brown.  Spread sour cream layer next. (using the flat end of a spatula works well to evenly spread cheezy sauce, sour cream and guacamole)  Sprinkle with corn and olives.  Spread guacamole and then sprinkle the pico on top.  Serve immediately.  Is also good as a cold dip.

* Note about "sour cream" and Pico Recipe

You can either use 1/2 cup Sunflower Seed Sour Cream and add the juice of half a lemon, 1/2 cup Vegenaise and 1 teaspoon Taco Seasoning.

OR

A super high omega 3 version....Has been studied and found to be not only anti-cancer but one of the easiest ways to assimilate Omega 3's from flax:

Take 6 Tablespoons Organic Cottage Cheese blended with 3 Tablespoons Flax seed oil with immersion blender for at least a minute.  Add 1 tablespoon freshly ground golden flax, juice of 1/2 lemon, 1/2 cup Vegenaise, 1/2 teaspoon Real Salt, 1 teaspoon Taco Seasoning

Simple Pico
2 Large Tomatoes, chopped
2 Tablespoons chopped onion
1 small bunch Cilantro, chopped
juice of half a Lime
dash of salt

Mix all ingredients together.

We are making this, this week!! YUM!! What are your suggestions for a good flax seed oil? I've read you have to be careful to buy a brand that carefully packages the product because it will go rancid very easily.

Sherrie: I know Barlene's and Udo's are both good brands also the Flora I think that produces Udo's is good. Just be sure it is in the refrigerator section I wouldn't ever use any Flax oil that has not been kept cold.

Tammie, We tried this during the week, with a few adjustments, and the kids alllllll loved it. My hubby's mom made "Super Nachos" when he was growing up, and it's such a nostalgic food for him. He commented that this 7 layer dip could definitely take the place of his beloved Super Nachos. I plan to share it on my blog-hopefully directing many more people to yours. You're awesome!
