Roasted Ranch Potatoes with Garlic and Onion


Ranch Style Roasted Potatoes
We had these with Christmas Eve dinner and the kids kept asking for them again.  So I made them again the other night.  Pretty darn TASTY!  A fun country style way to dress up regular old potatoes.  We think they are great, hope you do too.




Ranch Potatoes
Roasted Ranch Potatoes with Garlic and Onion
8 very large potatoes, washed and cut into large chunks
1 bulb garlic (yes the whole bulb not just a clove)
2 teaspoons Real Salt
1/2 teaspoon pepper
3 Tablespoons Homemade Ranch Dressing Mix
1 Tablespoon Arrowroot powder
8 Tablespoons Olive oil
1 onion, cut in half and thinly sliced

In large pot place garlic (unpeeled) and potatoes.  Cover with water, place lid on pot and bring to a boil. While wait to boil in a small bowl mix the salt, pepper, ranch mix and arrowroot powder together. Uncover potatoes, reduce heat and cook for about 10 minutes, potatoes will not be fully cooked (still a bit hard)  Drain and place garlic in cold water to cool then squeeze the skins off.  Place peeled garlic cloves in with the potatoes.  Place 2 Tablespoons of olive oil in large casserole dish and coat the bottom of the pan.  Mix the rest of the Olive oil (6 Tablespoons) with the potatoes, mix in your Ranch mixture until potatoes are well coated.  Place potatoes in Casserole dish.  Bake in preheated 425 degree oven for 20 minutes, turning once.  Then place sliced onions over potatoes and cook for another 20 minutes, turning once or until potatoes are well browned.  If you want more crispy potatoes cook a bit longer (about 10 minutes more).

do you usually serve this with something else??

Miss Niss: When we had it with Christmas dinner we served is with Broccoli Salad, Baked beans, veggie tray and crackers with lots of dip, sweet potatoes and punch but that was Christmas dinner after all. ;) Last time I just served it with a big Salad. We all got full but there was very little left over!

It says to take the garlic cloves out before the potatoes are quite soft enough. Am I also supposed to put the potatoes in the pan to cook before they are quite soft enough? Or am I supposed to cook them fully, drain them, and then put the mixture in the pan to cook in the oven?

Also, I now realize why I wasn't supposed to peel the cloves, AT ALL. Oops. If I had just dropped the entire bulb right in the water, it would have been soooo much easier to fish it out. Once cool it's easy to slip all the peels off.

I made the mistake of still separating the individual cloves, which made them all look like little pieces of the floating potatoes next to them. Lesson learned.

Kimberly: The potatoes are not quite all the way cooked....they finish cooking in the oven. Sorry for your garlic hassle. ;) Hope you potatoes turned out great either way!
