Minestrone Soup

With all this cold weather we have been loving this recipe!  Ryan has always liked a good minestrone soup and I have tried making them a few times but we were never super excited about them.  They almost tasted more from a can then homemade.  Anyway this one is full of yummy homemade flavor but is so easy to make!  I think the slow cooking is the trick. ;)  Or maybe I'm getting better at this recipe creation thing. ;)  Enjoy and stay warm!



Minestrone Soup
2 Tablespoons Olive Oil
2 small zucchini or summer squash, chopped
3 large carrots, sliced
2 stalks celery, sliced
1 medium onion, chopped
2 cans diced tomatoes or 1 quart bottled
1 can Kidney beans, drained
1 can Cannellini beans, drained
1 can cut green beans, drained
4 leaves kale, sliced into thin ribbons
6 cups water
2 Heaping Tablespoons Veggie Broth Powder
2 teaspoons Real Salt
pepper to taste
1 teaspoon Italian Seasoning
1/2 teaspoon Basil
2 bay leaves
4 cloves garlic, minced
dash of Cayenne
2 cups whole grain macaroni

In large (5 quart) crock pot place oil and cut veggies stir add tomatoes and beans.  Stir the water and both powder together add that and the rest of the seasonings to crock pot.  Turn crock pot on high and cook for 4-5 hours (longer if you like softer veggies).  Add macaroni about 10 to 20 minutes before time to eat soup otherwise they will be way overcooked.

    This is off topic but what prenatal vitamins do you recommend to use? Do you have any other health tips for pregnancy? I had a medium case of Hyperemesis graviderum with my last pregnancy and would like to be prepared for my second! Thanks!

  2. Sherrie: I used prescription prenatal vitamins with my first child and that didn't go well. I found they made me more nauseous. I simplified things a lot with other children. And found that although supplements are beneficial in pregnancy whole foods are the very best. So when it came to supplements I looked for whole foods based. My last pregnancy my "supplement" of choice was green smoothies. I used flax seed oil and flax and chia seed in it quite a bit. I used Liquid Light a plant based liquid mineral supplement from Sunwarrior and of course lots of dark greens. I found the best things for nausea for me was Red Raspberry Leaf Tea with Peppermint. I also constantly had a box of The herb (mint) flavored Panda Bear Licorice with me it really helped, plus licorice is great for balancing blood sugar so that was helpful too. Also when the "morning" sickness would kick in every EVENING ;) I would take my box of Panda Bears and go to bed (most of the time I was in bed before eight or nine but it helped me not feel sick and by morning I was fine.) That's all I can think of right now off the top of my head. But I will think on it and work on a pregnancy post there I a few things that I would do different too if I were to do it again. I'll keep thinking!

  3. Thank you Tammi! A pregnancy post would be AWESOME!!! I am doing green smoothies now, but will look into the flax seed oil and liquid light! The teas are a great idea too!

  4. I saw on a thread someone mentioned taking AbsorbAid helped with their nausea. It is basically an enzyme supplement... I am going to get some liquid light because I've heard good things about this from Robyn Openshaw as well, so thank you for reminding me of this! But to save on money I will not get AbsorbAid if liquid light does the same thing. From what I understand it also has enzymes to help with nutrition absorbtion... do you think this is accurate?

  5. Sherrie: It sounds to me like AbsorbAid is a Enzyme supplement to help with digestion. I say eat lots of Raw food that have lots of enzymes. Liquid Light is a mineral supplement. With plant based minerals that are more easily absorbed.
