I love this smoothie! It gives me tons of energy and stays with me most of the day! If I know I'm going to be really busy or running all day and not have time for a big lunch, but need to keep going strong, this is my smoothie of choice! The coconut water is full or electrolytes and combining them with the kale has been compared to a blood transfusion. Chia seeds are a complete protein, super high in antioxidants, and are said to have been the food of choice by Roman Legions in the middle ages because it gave them strength and energy to fight and was compact and portable and filling! I have also read that they can remove up to 40 times their weight in toxins from the body! Chia seeds aren't just for chia pets!!!! A great food storage item! Beets are amazingly good for you along with everything else! This is just a awesome smoothie! Give it a try!
Beet Boost Smoothie
Water from one Young Coconut
½-1 cup water
1 small beet
1 large Kale leaf
1 small bunch of beet greens
10 baby carrots
10 frozen strawberries
½ cup frozen blackberries
1-2 frozen Bananas
1 Tablespoon Chia seed, optional
2 teaspoons agave, optional
Place liquid, greens, beets and carrots in blender. Blend until smooth. Add the rest of ingredients blend until really smooth. If you have smaller then a 96 ounce blender container cut recipe in half.
Makes about 3 quarts.

I have a blendtec, but am still new to using it. What settings do you use to blend and how many times? Thanks a bunch!
ReplyDeleteEileen: The first blending with the beets etc. I just push the smoothie button, if I have big chunks of beets I do it twice. Then I add all my fruit etc and usually go through the smoothie cycle twice more that way it gets nice and smooth.
