5 cups oats
1 cup brown rice crispy cereal
1/2 cup unsweetened coconut
1/2-1 cup carob chips and/or raisins (optional)
1 cup Sucanat
1 teaspoon sea salt
1 cup coconut oil, melted
1/2 cup honey or agave
1 teaspoon vanilla
Add all ingredients to a large bowl and mix together until combined. Press into a bar pan (about 9x13) greased with coconut oil. Bake at 350 for 20 minutes. Cool for 10 minutes and score into bars. Be sure to remove from pan when still a little warm. They need to be cool enough so they don't fall apart but warm enough that they aren't sticking to the pan.
The only problem we have had with these is they tend to be a little crumbly sometimes. Some tricks we found help are to.....1. Use less Sucanat and more honey so they stick together better. 2. To use quick oats or pulse regular oats in the blender to break them down a bit so they kind of "soak in" the other ingredients. 3. It's a pretty versatile recipe the base is the oats, oil, and sweeteners, you can trade out any ingredients you want, like you could try golden flax meal in place of the cereal, there are lots of fun options just make sure the balance of wet/dry is enough to hold them together.
