Black Bean Chipotle Chili

Black Bean Chipotle Chili
2 Tablespoons Olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped, any color, optional
1-2 cups frozen corn, optional
2 Tablespoons, Sucanat
1 teaspoon Chipotle, powder or flakes
2 Tablespoons chili powder
4+ cups Restaurant Style Black Beans, with some liquid
1 Tablespoon Oregano
1 Tablespoon Basil
1 can (15oz.or pint) diced tomatoes,
1 Tablespoon red wine vinegar
In large pot lightly saute onion and garlic and optional pepper in oil. Add corn if wanted, Sucanat, Seasonings, black beans and diced tomatoes. Do not drain the tomatoes. Simmer ingredients in pan for about 10-15 minutes stirring some. Add vinegar and simmer for just a little longer! Can serve like soup, with baked potatoes or cornbread or whatever you like!

Leah: Sucanat stands for SUgar CANe NATural. You can find it at pretty much any health food store or I get mine in Bulk through Azure Standard. It is the whole cane juice with all the vitamins and minerals still in it dehydrated at lower temperatures.
