Cashew Cream Cheese

Cashew Cream Cheese
1 1/2 cups raw cashews
2 Tablespoons olive or coconut oil
1 Tablespoon Lemon juice (more if you lake it tangier, may add some apple cider vinegar instead of as much lemon if using in a savory dish.  It wouldn't be good in a sweet dish though)
1/4 teaspoon Real salt
1/4 teaspoon guar gum, opt.

Soak cashews for 20 minutes or up to 4 hours.  Drain well.  Add all ingredients to blender, blend until smooth.  If you don't have a high power blender you may want to save a little of the cashew water to add to help it blend nice and creamy.
