Banana Splits

My husband has never been a huge cake fan so for his birthday this year we had banana splits!  He has wanted me to make a yummy caramel sauce for a long time.  After making these I knew it would be easy!  He loved it!  And so did everyone else!  Enjoy!


Banana Splits
1 Banana sliced in half the long way
(when I need it easier we buy So Delicious brand vanilla coconut milk ice cream, it has great ingredients)
Chopped nuts of choice (we like walnuts)
Favorite all fruit jam (strawberry or raspberry is most common)
Chopped fresh pineapple (optional)
Caramel Sauce (recipe below)
Layer ingredients like you would for a banana split.  If you like whipped creme on your it's good with this.  Ryan says it's a little redundant though. ;)


Caramel Sauce
1/4 cup Sucanat
a pinch of Real salt
1/4 cup maple syrup
2 teaspoons vanilla
1 Tablespoon agave (or more maple syrup)
2 Tablespoons coconut cream (the thick stuff off the top of cold can of coconut milk)
1 Tablespoon Coconut oil (mix with a drop of natural butter flavor if desired)

In a saucepan combine all ingredients except coconut oil bring to a good simmer.  Stir and let simmer for 2-3 minutes.  Remove from heat and add coconut oil.  Stir well and combine.  Is best warm left overs can be kept in a jar in the fridge.

Do you get your coconut milk at a health food store, do you buy in bulk, and does it ever go on sale?

Emily: You can usually find Canned coconut milk in the ethnic section at your grocery store. I Like Thai Kitchen Brand.

I also get it by the case from azure when it goes on sale. I have also seen it on sale at my health food store but I kind of got lucky! It helps if you have a friend who works there. ;)

What is Sucanat? I have some friends who try to eat healthy foods, and they sometimes use "Xylitol" or something, but it gives them headaches if they don't mix it with white sugar. I'm thinking anything with a name like "Xylitol" can't actually be good for you; it sounds too much like a drug name. So is Sucanat similar, or what? What is it derived from? And is it expensive? Does it come in five pound bags?

Anonymous: Sucanat stands for SUgar CAne NATural. It is made from dehydrated sugar cane with ALL the nutrients (the molasses) still in it. Xylitol is sugar alcohol a lot of people say it is a better option then sugar but it still looks rather processed to me so I feel like it isn't the most healthy option for a sweetener.

Sucanat is derived right from sugar cane. It's dark in color and has the nutrients of sugar cane left in it (molasses is the nutrients that has been processed out of white refined sugar) If you buy it in bulk it is only a few cents a pound more expensive then regular sugar. I have seen it in 2, 25 and 50 pound bags.
