Man oh man I'm not sure if you saw the picture of this recipe that was here before. But it makes me really excited that I am for sure improving on my food photos! When I first took these ones (March 2010) I was a little frustrated because I felt like I just wasn't getting a very good picture.
Everyone was hungry and I kind of "gave up." Now today (April 21, 2014) I found the old post with the recipe and the old picture and I was like WOW it was a huge difference and made these pictures look awesome. One of these first days I'll post the before picture with one of these after pictures so you can see.
Mostly I'm just excited to see that I am learning and improving. As far as the recipe goes.....We love this very simple quick and easy tastes like pizza but is made in a skillet and takes less than 30 minutes to throw together.
Our family has been enjoying this recipe for years!
1 box whole wheat Penne pasta
1 bell pepper any color, chopped
1 onion chopped
1+ cup frozen corn
1 small zucchini chopped
1 can olives sliced
Any other Veggies you would like in it
1-2 Tablespoons of Olive oil
1 jar of Spaghetti sauce
Any other spices and seasonings you want depending on how well seasoned your sauce is
Red Pepper Flakes to taste (optional if you like it spicy)
Hemp seeds (optional, we like to sprinkle them on top)
Cook and drain pasta. In very large frying pan saute all veggies but olives in Olive oil. Add sauce, seasonings and pasta. Simmer for a couple of minutes. Stir in sliced olives sprinkle with hemp seeds.
Prep Time: 10 Minutes Cook Time: 10 Minutes
Total time spent: 20 Minutes

I made this tonight and even the kids loved it. It was so yummy! We added some chopped spinach and really liked that.
