Chilaquiles

Chilaquiles
Green Cabbage, finely sliced
corn tortillas made crisp in your broiler and
broken into pieces or tortilla chips
olive oil
corn
olives, sliced
tomatoes, chopped
fresh cilantro, chopped
can of kidney beans and/or black beans
salsa
onion, chopped
green bell pepper, chopped
jalapeno, chopped (optional)
chili powder
cumin
Mexican seasoning


Alright this is really basic you just kind of throw stuff in. I take a large frying pan put in some Olive oil and saute the onions and peppers throughout I'm adding the spices to taste! I then add the corn and beans and any other veggies you think would be good in it. Then last I add the tortilla chips, salsa and olives and stir just until coated and warm. Just place large handfuls of raw sliced cabbage on your plates and top it with the filling from the pan and then add the cilantro and tomatoes. You could squeeze a little lime on it too and we like to put my cheezy sauce and ranch dressing on it! Good stuff!

  4. This was so yummy for me, as I've never known quite what to do w/ cabbage except for borsht and like cook it with beef. I recently have been realizing cabbage works great as a wrap leaf for lettuce wraps, and loved it with the salsa type things, it gave it that extra volume and raw vegetable I want, the cilantro mixed well with it. I add raw garlic to my black beans.
