Alright I hope you are all excited as I am to have a Healthy Yummy Potatoes recipe! Now like most healthy things don't expect it to taste EXACTALLY like it's unhealthy counterpart! But you can expect it to be very Tasty and just as comforting! My whole family LOVES it! I hope you enjoy it too!
Usually I just make hashbrown from potatoes using my salad shooter. But for Yummy Potatoes the frozen ones are so much more Simple and work better! This is the kind I buy!
3/4 of the package (shown above) of frozen hash browns
1 recipe Cream of Something Soup
1 recipe Sunflower Seed Sour Cream (3 parts of recipe 1 part Vegenaise with a little more lemon juice if you want it even more sour creamy like)
1-2 cups Cheezy Sauce (depending on how "cheezy" you want it)
3 Tablespoons coconut oil
2-3 slices of whole wheat bread
Place the frozen hash browns into a 9x13 pan or larger (you may want to put these out a little ahead of time to thaw a bit it will decrease how long they will need to cook). In a medium sized saucepan make the Cream of Something Soup. In a meduim sized bowl combine the Sunflower Seed Sour Cream, Cheezy Sauce, and the completed Cream of Something Soup. It's great to have it still be warm because it will melt the other sauces and since I usually have some of these made up in my fridge they are cold and need to be melted so they mix together well. Take the mixture in the bowl and pour over the hash browns. Mix well to coat. In a small pan melt the coconut oil crumble the bread into the melted coconut oil and stir until the bread soaks up the oil. Sprinkle the bread crumbs on top of the potatoes. Bake at 375 degrees for about 40 minutes until warmed all the way through and the bread is browned on the top.

Where did you buy your Rapunzel Broth? Also, where did you buy your potatoes? We are moving to Utah this summer, so I am sure I will be asking you more about where to buy things.
Kim and Courtney: I get the potatoes from none other than yep Wal-Mart and I buy the broth through Azure Standard you may be able to find it at some health food stores they may even be able to order it in for you! I'm so so so excited to try this recipe. I just had to take funeral potatoes to a funeral. I didn't even know how to make them. lol I had to call my mom! I like them but NEVER make them because I know they aren't good for me, but....Now they are! whoohoo!

I tried making this recipe with the yukon gold potatoes and made it into a potato augratin. I think it was a success at Easter. I make the traditional green bean casserole also but with the "cream of something soup". For the fried onions it is so simple. Soak onion rings in soy or rice milk then flour and cook in a frying pan with olive oil. Sprinkle on top and in the casserole-you'll love it! I'll never go back to canned holiday food. It is so fresh and yummy.
Have you or anyone come up with a French Green Bean Casserole that is healthy?
