Chocolate Mousse


This recipe also has lots of possibilities. I hope to try it without the Carob but I may have to play with it so the cashew flavor will not be too strong. Also other flavorings could be used to suit your tastes! Have fun and enjoy! Remember it's Healthy! The picture is above is of Chocolate Pudding Parfait the picture below is of the inside of a Young Coconut. I cut a inch off the flat side and poke two hole in it with a hammer and a screwdriver then I pour out the "water" that is on the inside and use it in my Beet Smoothies. I then put the coconut back in my fridge until Ryan has time to bust them open. He usually just takes them into the garage and gives them a good whack with a hammer, then he brings them in the kitchen and rips them open. Then we scoop the meat out with a spoon (it is quite soft and jelly like) and put them in baggies and keep them in the freezer. I thaw out the amount I need BEFORE I make this recipe.


Chocolate Mousse
2 cups young coconut meat (from a baby Thia coconut)
1 cup raw cashews soaked for 20 minutes in
1 cup of water (DO NOT DRAIN)
4 heaping Tablespoons of raw Carob powder
1/2 cup Agave or pure Maple Syrup
1 teaspoon vanilla
1/4 teaspoon sea salt
1/2 teaspoon extract of choice orange, mint, etc. (optional)

Blend in blender until really super smooth! Chill and enjoy!

We got a 1/2 cup of meat from one coconut. Is that right?

Yeah Courtney you can get anywhere from 1/2 -over 1 cup depending on the size of the coconut.
