Savory Sausages

Savory Sausages
1 cup black-eyed peas, somewhat drained;)
1/4 cup whole wheat flour
One half of a 4 oz. can of mushroom, well drained, finely diced
or 1/8 cup very finely chopped fresh mushrooms
2 teaspoon onion powder
1 teaspoon tomato paste
1 teaspoon crushed fennel
1 or 2 dashes crushed red pepper flakes
1 teaspoon basil
1 or 2 sprigs parsley, finely chopped or 1 teaspoon dried
1/8 teaspoon pepper
1 teaspoon crushed rosemary
1 teaspoon sage
1/2 teaspoon sea salt

Mash black-eyed peas and flour together in bowl. Add mushrooms together with peas and flour. I like to sprinkle a little of the seasonings into the "meat" mixture. Roll into sausage shapes. Put spices on clean surface, like a plate and roll the sausages over the spice mixture, coating well. In frying pan on medium to low heat, in a little oil fry the sausages, carefully turning as they brown. (And they do turn a nice golden brown)Serve hot and enjoy!

We just made these as sausage patties for dinner tonight and wowza! They were so good.

It has been so long since I have had meat but I thought these tasted like the real deal. I think the trick for us was to not hold back on the olive oil when frying them in the pan. I forgot how fattening pork is and adding extra oil gave it the same texture/flavor.

I have made these sausages several times for my family's dinner. I had to laugh when my two year old son said, "More meat please." They are better than meat any day!!

:) I didn't have mushrooms, but did have onion, so I chopped a bit of that. I had kidney beans rather than black eyed, and found mine to be a bit sticky, so I put in 1/2 cup oat flour, and followed the suggestion to fry in more oil, and coated my hands with the oat flour which made them a cinch to roll. I am so excited, they are yummy! I'll admit I am pleasantly surprised. :) This was a test drive to see how they'd work for the fam. This recipe made about 6 hot-dog sized sausages.
